Instead of writing a recipe and finding someone to make it, we work backwards - starting with the towns and families already known for a specific sweet or snack.
Tirunelveli for halwa. Srivilliputhur for palkova. Specific regions known for their pickle-making traditions or masala blends.
The idea is simple: the people who've been making a dish for generations, in the place it actually comes from, understand it better than anyone reverse-engineering it elsewhere.
There's a real difference between a large-scale sweet manufacturing unit and a heritage vendor who's been making halwa or pickle the same way for decades, often having learned it from a parent or grandparent.
We prioritise the latter - smaller-batch producers who haven't compromised on process just to scale faster.
It means our supply is sometimes more limited, but it also means what reaches you is closer to the real thing.
A lot of brands focus their "authenticity" story entirely on ingredients - real ghee, no preservatives, and so on.
Those matter, but process matters just as much.
Does the halwa get stirred by hand for hours, or rushed through a machine? Is the pickle actually sun-dried, or is that step skipped for speed? Is the masala freshly roasted in small batches, or ground once a month in bulk?
These process details are usually invisible to the customer, but they're exactly what separates something that tastes homemade from something that just looks like it on the label.
Sourcing from smaller, traditional vendors comes with its own challenges - consistency can vary, and scaling takes patience.
Our approach is to build long-term relationships with a curated set of vendors rather than constantly switching for the lowest price, and to keep a close eye on quality and freshness before anything gets packed and shipped.
Honestly, it comes down to this - a lot of people ordering from Olapetti are doing it because they're far from home, or they want their kids to taste something they grew up with, or they simply miss a specific sweet from a specific town.
That's a meaningful reason to order food, and it deserves more effort than sourcing the cheapest available option and calling it "traditional."
We're not claiming to be perfect at this - sourcing genuinely traditional food at scale is hard, and we're constantly learning and refining how we do it.
